Chicken Curry Soup

“You know how you make soup on the weekends, ” my sister says to me offhandedly.

“Yes…..I am making my chicken curry this weekend,” I can just feel she has some plan.

“Well you should make extra…..err…. because I entered you in a local soup contest.”

“You What?!?!….you know I am not competitive like the rest of you, “shaking my head laughing at the absurdity of the whole concept.

And so it went.  One humongous giant step out of my cozy comfort zone.

Then I get the email last night that every single last local news team will be there….one more big step.

~

~Saute  in 2Tbsp Coconut Oil for 5-7 minutes in large soup pot:

  • 2  large diced carrots
  • 3 celery  stalks diced
  • 1 small sweet onion diced
  • 5 cloves of garlic diced fine
  • 2 inches of diced ginger
  • 2 small sweet orange peppers cut into rings
  • salt and pepper to taste

~Add and Simmer for 20 mins

  • 1tsp ground Tumeric
  • 2tsp ground Curry
  • Salt and Pepper to taste
  • 2 c. cooked  chopped chicken
  • 1 gallon stock
  • 2c. cooked brown rice

~ Add and Simmer 10 mins

  • 2 cans Coconut Milk
  • 1/2 bunch chopped cilantro

~Serve with Saracha sauce and more cilantro. (We also garnish with crushed cashews.)

All the proceeds went to the local fire company who did so much for all the flood victims. We were on all the morning news….my ole sister and me. All day people came up to us telling us they saw us on the news. I made my sister do all the talking… from her years and years of interviewing celebrities she is calm and a professional in front of a camera and a mic. The chief of the fire company saw us on the news and he came up to us and thanked us for saying such nice things.
Funny thing is no one knows when you are stepping way out of your comfort zone. It’s just your little secret. And it really isn’t that bad. Even if I never would have planned it … it was a ton of fun and we met a lot of really great people. ~T

    I love how your sister signed you up first…asked second…I guess she knew you well. Way to go…stepping out! recipe sounds very good…

    Hmm, The girl in the red coat looks like someone I once knew in high school. (Karen Dobbins?) Either way, I love curry and your soup recipe looks delicious!
