Local and Organic: Pancake ~ Cake and Free Giveaway!!

Ingredients:

  • 3c. Gluten Free Flour
  • 2c. Milk (coconut milk works fine for dairy free)
  • 6 eggs
  • 1 capful vanilla
  • 1 smidge salt
  • 2tsp cinnamon
  • 4 thinnly sliced apples
  • 4Tbsp Real Maple Syrup

Grease: either 13×9 or a medium jellyroll sheet
Preheat oven: 350*

Whisk: Milk, eggs, vanilla and Flour. (this is your base)
Add to make Apple Pancake~Cake: 1tsp cinnamon, 2Tbsp Maple Syrup
Some Assembly Required:

  • Apple slices sprinkled with remaining cinnamon on bottom of dish.
  • Sprinkle with Salt.
  • Drizzle remaining syrup.
  • Cover in batter.

Bake: at 350* for 25 minutes

I used this recipe many times while at the beach. At that time I found peaches readily…the recipe is very forgiving and goes nicely with whatever fruit you have available. If it isn’t winter I make this the night before and leave it out for my children to eat in the morning. They don’t mind if it isn’t hot. Obviously in the colder months a hot breakfast is more needed to get the day started.

    I looooooooooove fresh maple syrup it always slows me down though, in the grocery store, because it usually costs about 6 dollars more than mrs. butterworths…which by the way is complete false advertising! she never came to life as a kid..but anyway I love your pictures and that recipe looks divine!
