Sexy Little Sun Butter Cups.

My husband is an ex-sugar addict. There I said it. Now you know most everything about us. When I first met him he would eat waffles with whipped cream…and fruit, and syrup, and powdered sugar and chocolate chips. After I had our third baby (Who was a doozy of a screamer~God Bless him he is wonderful now at 7) this awesome man would make “us” a brownie sundae to “share” while I nursed this baby through evening TV. The brownie sundae was in a dish… a casserole dish! It was a monstrosity of sugar: brownies, bananas, whipped cream, carmel, marshmallow fluff, strawberries, hot fudge, peanuts…all in a casserole dish! Truth be told I hope I never forget how even though I was flinching in postpartum pain, he would spoon feed me this amazing deliciousness. I don’t remember the pain…now, even though I know it was wretched…But I will never forget how sweet he truly was and is to me.
We don’t do brownie sundaes anymore… Sometime after baby #4 we gave up gluten… then he went off dairy and sugar which made him drop 85lbs. Nice right?! For sure…just don’t go off sugar while your wife is in her last trimester of baby #7 because the withdrawal from sugar is that akin to hard drugs…not fun, for you or for her! Since then he is all nuts and twigs, fruits and vegetables and meat, decadent organic grass fed humanely raised meat…. I think the new hip word is “Paleo”.
So anyway… along the way I have had to really up my game in the kitchen to surprise him. Sounds sexy doesn’t it? Every so often I come up with a new treat to spice things up a bit. Now this is really sounding sexy…well you do what you have to after all these kids and this many years of marriage…and sometimes that means making some oh so silky drizzly cacao syrup…all raw and healthy.
Ahem, now onto my latest experiment….
Using the same ingredients from when I make Cacao Covered Strawberries:
Cacao Syrup Recipe:
1/2c ground cacao nibs
1/2c melted coconut oil
a cap of vanilla
3T agave syrup or honey
a sprinkle of sea salt
*Blend together
I covered the bottom of the little cups on a lined cookie sheet. I then took some sun butter (maybe a 1/2cup for this) and 2 tablespoons honey and mixed them together. With two butter knives I dropped dime sized dollops on top of the cacao syrup. Since this was an experiment… I only put the flax seed cereal on top of half of the cups. I finished by covering all of them with the rest of the syrup. To hurry up the setting process I popped them into the freezer for 5-10 minutes.
The verdict is in…He loves them…. both varieties. I had wanted to find puffed quinoa… I am sure if I had a Whole Foods or Trader Joes it would have been easy… I don’t, so I used the flax seed cereal. The crunch is great! And look at the ridges along the side of the cup.. you know if you are candy deprived…that means something! Seems like a keeper!

Oooh, I saw your photo on Instagram of these – they look delicious! Thanks for sharing the recipe. I have never bought cocoa nibs before, nor am I sure of where I might find them! I’ll have to keep my eye out, or resort to Amazon!
They are really good.
cacao powder is tricky to find if you don’t have an organic grocery store.
We used to just buy the cacao nibs and grind them up because they are so good for you…bitter but super healthy.
Now we have found the powder …maybe on amazon.

Oh Sun butter is made from Sunflower seeds instead of peanuts.
generally speaking in the crunchy healthy world…peanuts =bad & all other nuts = better.
