The very best Banana Muffins ever!

May 8, 2012

These are the very best banana muffins we have ever had.

Everyone we know requests for us to make tons of them.

I dare you to make one batch…

~The Very Best Banana Muffins Ever!~

2 sticks room temp butter (we have done butter & coconut oil combos, too, just cut back on the coconut oil)
1.5c sugar
4 eggs
3c Gluten Free Flour (we always use Pamela’s)
2tsp baking soda (I know that Pamelas has it already…they still need more lift)
2tsp sea salt
2c mashed up ripe bananas
1c sour cream (we have used the fakey dairy free kind, too)
2tsps/capfulls vanilla

Whisk up till fluffy the sugar and butter
Add eggs, vanilla and sour cream
In separate bowl whisk your dry ingredients.
Add them together and fold in the bananas

Bake in a 350* oven in muffin tins for 22 minutes.

My brother asked for a batch for his birthday…friends call us back to find out the recipe…people stop mid conversation to say, ” whoa!these are good” and “honey! did you try these…ya gotta!”

you think it’s just going to be a boring muffin and then, it’s not.

We were taking them to a woman who is going through a hard time…and I just thought as we were putting them in the basket…I need to tell my readers about these!

So here ya go!

I hope you can use them to bless others… because we have seen them give us a way into peoples hearts…I know that sounds crazy, lol…just something about these muffins!
There is a rescue coming…and sometimes it looks like banana muffins.

Ours does sell it.. but because of the size of our family we order it through Amazon.com
Many gluten free families make their own flour blend.. I am not much of a baker so I don’t want to mess with a good thing.

Here, here! Those look GREAT. Please come link up at my DIYlinky at http://www.littlehouseinthesuburbs.com . I have some oddball gluten free things over there, and grain free too. I can’t eat ANYTHING.
